Born and raised in central Maine, Deanna Thibeau has over 17 years of extensive food and beverage knowledge spanning wine bars, brew houses, pubs and craft cocktail lounges. Her experience began as a prep cook at small family-owned pizzeria and eventually evolved into ownership of a successful craft cocktail lounge, The Maine House. The focus of the craft bar was locally sourcing ingredients to provide unique, upscale spirits and inventive cocktails. The ten-tap beer line carried only Maine crafted brews, plus Maine distilled spirits, over 50 house spirits infusions and a seasonally changing cocktail menu. In addition, she has over eight years’ experience in catering as both a cook and bar manager.
Upon arriving in Florida, Thibeau was hired by Jardin in West Palm Beach to establish the craft cocktail program. She was promoted to general manager, but always kept focus on the crafted cocktail menu and seasonally inspired libations.
According to Thibeau, “My love of blending the ‘bar world into the kitchen world’ began when I was cooking by day and bartending by night. I started to play with food-based ingredients mixed into spirits. My passion for food and liquors combined with my appreciation for a classic cocktail approach is what Brick and Barrel is all about.”
At Brick & Barrel, Thibeau is the bar manager and mixologist utilizing her creative talents, “mixabillty,” and unique ingredients to create classic, signature and innovated cocktailing with the guests.
Thibeau’s curated cocktails have been featured in Maine’s Eater’s Cocktail Heat Map and in several South Florida publications including but not limited to; The Palm Beacher, West Palm Beach Magazine, and The Palm Beach Post.
Thibeau lives in West Palm Beach with her pup, Brees.
